Basil Pesto

When my basil is bountiful – I make large amounts of this delicious pesto. It freezes beautifully (follow the directions below on how to do this) and my friends go crazy over it! We love it on crusty bread with garden tomatoes, on panini sandwiches, tossed with pasta, smeared under the skin of chicken breasts – you name it! Because the ingredients are simple, it’s very important to use good quality extra virgin olive oil in this recipe. You’re going to taste it so if it’s not an olive oil you enjoy – don’t use it for this recipe.
